  • 1 cup panko breadcrumbs (or crushed cornflakes as substitute)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, smoked paprika, and garlic powder until evenly mixed.
  3. Pour the melted unsalted butter into the dry mix and blend with a fork or whisk until the mixture looks crumbly, like coarse sand.
  4. Slowly add the milk while stirring until a thick batter forms, smooth but not too runny. Add more milk if needed.
  5. In a shallow bowl, mix the panko breadcrumbs with grated Parmesan cheese if using.
  6. Using a tablespoon or your hands, scoop out small portions of batter (about 1 tablespoon each) and roll or pat them into rough discs or nuggets.
  7. Gently press each snack into the breadcrumb mixture, coating all sides well.
  8. Arrange the coated snacks evenly spaced on the lined baking sheet.
  9. Bake for 15-18 minutes, checking around 12 minutes for a golden brown color and satisfying crunch.
  10. Remove from oven and transfer snacks to a cooling rack for 5 minutes to keep them crispy.
  11. Serve warm, sprinkled with fresh parsley if desired.
