  • 2 large chicken breasts (about 1 pound), boneless and skinless
  • 1/2 cup sun-dried tomatoes in oil, drained
  • 2 tablespoons olive oil (or oil from sun-dried tomato jar)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)

Instructions

  1. Season and brown the chicken: Pat chicken breasts dry, season with salt, pepper, and garlic powder. Heat 1 tablespoon olive oil in a Dutch oven over medium-high heat. Cook chicken 4-5 minutes per side until golden brown. Transfer to a plate.
  2. Sauté the aromatics: Reduce heat to medium. Add remaining 1 tablespoon olive oil (or sun-dried tomato oil). Cook onion 3-4 minutes until soft. Add garlic and cook 30 seconds until fragrant.
  3. Add sun-dried tomatoes: Stir in drained sun-dried tomatoes and cook 1-2 minutes.
  4. Build the broth: Pour in chicken broth, scraping up browned bits. Add oregano, basil, and red pepper flakes. Stir.
  5. Simmer the chicken: Return chicken to pot. Bring to a gentle boil, then reduce heat to low, cover, and simmer 12-15 minutes until chicken is cooked through (165°F).
  6. Shred the chicken: Remove chicken, shred with two forks, and return to pot.
  7. Finish the soup: Stir in heavy cream and Parmesan. Simmer on low 2-3 minutes until thickened. If using spinach, stir in and cook 1 minute until wilted.
  8. Taste and adjust: Add salt, pepper, or more red pepper flakes as needed. Thin with broth or milk if too thick.
  9. Serve hot: Ladle into bowls and top with extra Parmesan, fresh basil, or olive oil. Serve with crusty bread.

Notes

Don’t boil the cream or it may curdle. Brown the chicken for extra flavor. Season in layers—Parmesan and sun-dried tomatoes add saltiness. For a thicker soup, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir in after adding cream.
