  • 1 pound kielbasa sausage, sliced into ½-inch rounds
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups fresh spinach or kale, roughly chopped
  • Optional: ¼ cup heavy cream or half-and-half

Instructions

  1. Brown the kielbasa: Heat olive oil in a Dutch oven over medium-high heat. Add sliced kielbasa in a single layer and cook for 3-4 minutes per side until deeply browned. Transfer to a plate with a slotted spoon.
  2. Sauté the aromatics: Reduce heat to medium. Add onion, carrots, and celery to the pot with rendered sausage fat. Cook for 5-6 minutes until softened and onion is translucent.
  3. Add garlic and spices: Stir in minced garlic, dried thyme, smoked paprika, black pepper, and salt. Cook for 30 seconds until fragrant.
  4. Deglaze the pot: Pour in about ½ cup of chicken broth and scrape the bottom of the pot to lift browned bits. Simmer for about 1 minute.
  5. Add remaining broth, tomatoes, and beans: Pour in the rest of the chicken broth, undrained diced tomatoes, and drained cannellini beans. Stir and bring to a gentle boil.
  6. Simmer: Reduce heat to low and simmer uncovered for 10 minutes, allowing beans to break down slightly and thicken the broth.
  7. Add greens and sausage back: Stir in chopped spinach or kale and browned kielbasa. Cook for 2-3 minutes until greens are wilted and sausage is heated through.
  8. Finish and adjust: If using heavy cream, stir it in and warm for about 1 minute. Taste and adjust salt and pepper as needed.
  9. Serve immediately: Ladle into bowls and top with fresh parsley or a drizzle of olive oil if desired. Serve with crusty bread.

Notes

Don’t rush the browning step; it builds deep flavor. Rinse canned beans to avoid a gummy broth. Toast spices briefly to enhance flavor. Soup thickens as it sits; add broth when reheating. For a creamier texture without dairy, puree a cup of soup with an immersion blender before adding greens.
