  • ¾ cup (180ml) whole milk, room temperature
  • 2 large eggs, room temperature
  • 1 teaspoon (5ml) vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly with butter or cooking spray.
  2. In a medium bowl, whisk together sifted all-purpose flour, baking powder, sugar, and salt until evenly combined.
  3. In a large bowl, beat softened unsalted butter and an additional ¼ cup (50g) sugar until light and fluffy, about 3-5 minutes.
  4. Beat in eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Add vanilla extract and mix to combine.
  6. Gradually fold the dry ingredients into the wet mixture, alternating with whole milk, starting and ending with dry ingredients. Fold gently to keep batter thick but pourable.
  7. Pour batter into the prepared baking dish and smooth the top. Optionally fold in fresh berries or nuts before pouring.
  8. Bake for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  9. Cool on a wire rack for at least 10 minutes before slicing.

Use room temperature eggs and milk for a smoother batter. Fold ingredients gently to avoid tough texture. Watch oven closely near the end to prevent over-baking.
