Cozy Crockpot Turkey Breast with Easy Homemade Gravy

  • 1 boneless turkey breast (2–3 pounds)
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup chicken or turkey broth (low-sodium)
  • ยฝ cup dry white wine (optional)
  • 1 medium yellow onion, quartered
  • 2 medium carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 3 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • Fresh parsley or additional thyme for garnish (optional)

Instructions

  1. Make the herb butter: In a small bowl, combine softened butter, minced garlic, chopped rosemary, and chopped thyme. Add ยฝ teaspoon salt and ยผ teaspoon black pepper. Mash together with a fork until evenly mixed.
  2. Prep the turkey: Pat the turkey breast dry with paper towels. Gently loosen the skin if attached. Rub the herb butter all over the turkey, including under the skin if possible.
  3. Layer the aromatics: Place quartered onion, chopped carrots, and chopped celery in the bottom of a 5-6 quart slow cooker.
  4. Add the liquids: Pour chicken broth and white wine (if using) over the vegetables, avoiding the turkey to preserve the herb butter.
  5. Place the turkey: Set the turkey breast on top of the vegetables, breast side up. Cover and cook on low for 4-5 hours, or until internal temperature reaches 165ยฐF in the thickest part.
  6. Check for doneness: After 4 hours, start checking temperature. A 3-pound breast typically takes about 5 hours. When done, carefully lift turkey out with tongs and transfer to a cutting board. Let rest for 10 minutes.
  7. Make the gravy: Strain the cooking liquid through a fine-mesh strainer into a medium saucepan. Discard vegetables. Skim off excess fat. You should have about 1.5-2 cups of liquid.
  8. Thicken the gravy: In a small bowl, whisk flour with ยผ cup of the warm cooking liquid until smooth. Bring remaining liquid to a simmer over medium heat, then whisk in the flour mixture. Cook, stirring frequently, for 3-5 minutes until thickened. Season with salt and pepper to taste.
  9. Slice and serve: Slice rested turkey against the grain into even pieces. Arrange on a platter and pour some gravy over the top. Pass remaining gravy at the table.

Notes

For best results, cook on low rather than high to keep turkey tender. Let turkey rest 10 minutes before slicing to retain juices. Gravy can be made ahead and refrigerated; flavors deepen overnight. For a dairy-free version, replace butter with olive oil. To add extra vegetables, include mushrooms or baby potatoes in the slow cooker during the last 30 minutes.
