Ingredients

Scale
  • 2 pounds ground turkey (93% lean)
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 2 cups)
  • 4 cloves garlic, minced
  • 1 can (15 ounces) pure pumpkin puree
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped (for serving)
  • Diced avocado (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Shredded cheddar cheese (optional, for serving)
  • Lime wedges (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a wooden spoon, until nicely browned, about 8 to 10 minutes.
  2. Add diced onion to the skillet and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle chili powder, cumin, smoked paprika, oregano, chipotle powder, salt, and pepper over the turkey mixture. Stir and cook for 1 minute to toast the spices.
  4. Transfer the turkey mixture to a 6-quart or larger slow cooker. Add pumpkin puree, fire-roasted tomatoes (with juices), and chicken broth. Stir until well combined.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
  6. About 30 minutes before serving, taste and adjust salt and spices. If chili is too thick, add a splash of broth; if too thin, leave lid off for the last 30 minutes.
  7. Serve hot with desired toppings: cilantro, avocado, sour cream, cheese, and lime wedges.

Notes

Don’t skip browning the turkey for best flavor. Use pure pumpkin puree, not pumpkin pie filling. For a thicker chili, leave lid off during last 30 minutes. Chili tastes even better the next day.
