  • 2 medium delicata squash (about 2 lbs / 900g total), seeded and chopped into 1-inch cubes (no need to peel)
  • 1 medium yellow onion, roughly chopped
  • 3 cloves garlic, smashed
  • 1 medium apple (like Honeycrisp or Fuji), peeled, cored, and chopped
  • 4 cups (960 ml) vegetable broth (low-sodium preferred)
  • 1 teaspoon kosher salt
  • ยฝ teaspoon black pepper
  • ยผ teaspoon ground nutmeg (freshly grated is best)
  • Pinch of cayenne pepper (optional)
  • 4 tablespoons (56g) unsalted butter
  • 10–12 fresh sage leaves (plus extra for garnish)
  • ยผ cup (60 ml) heavy cream or full-fat coconut milk (for garnish, optional)
  • Crumbled bacon or crispy fried shallots (for garnish, optional)
  • Freshly cracked black pepper (for garnish, optional)
  • Toasted pumpkin seeds (for garnish, optional)

Instructions

  1. Prep the Squash: Wash the delicata squash well. Slice off the stem and blossom ends, then cut the squash in half lengthwise. Scoop out the seeds and stringy pulp with a spoon. Cut the squash into 1-inch (2.5 cm) half-moons or cubes.
  2. Layer the Aromatics: Place the chopped onion, smashed garlic cloves, and chopped apple into the bottom of your crockpot. Add the cubed delicata squash on top.
  3. Add the Liquid & Seasonings: Pour the vegetable broth over the vegetables. Add the kosher salt, black pepper, nutmeg, and cayenne (if using). Give everything a gentle stir to combine. The liquid should just about cover the squash; if it doesn’t, add a splash more broth or water.
  4. Slow Cook: Cover the crockpot and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The squash should be fork-tender and practically falling apart.
  5. Make the Sage Brown Butter: About 20 minutes before the soup is done, place a small skillet over medium heat. Add the butter and let it melt, swirling the pan occasionally. The butter will foam up, then subside. When you see brown specks forming at the bottom of the pan and smell a nutty aroma, immediately add the sage leaves. They’ll sizzle and crisp up in about 30 seconds. Remove the pan from the heat and set aside.
  6. Puree the Soup: Once the squash is tender, turn off the crockpot. Use an immersion blender to puree the soup directly in the pot until it’s completely smooth and velvety. If using a countertop blender, let the soup cool for 10 minutes, then blend in batches.
  7. Finish with Brown Butter: Pour the sage brown butter into the pureed soup. Reserve a few crispy sage leaves for garnish. Stir the butter into the soup until fully incorporated. Taste and adjust seasoning.
  8. Serve: Ladle the soup into bowls. Drizzle a swirl of heavy cream or coconut milk on top if desired. Garnish with the reserved crispy sage leaves, a few toasted pumpkin seeds, or some crumbled bacon. Serve immediately with crusty bread or a simple green salad.

Don’t skip browning the butterโ€”it’s the key to the soup’s rich flavor. Watch the butter carefully to avoid burning. Let the soup rest for 10-15 minutes before blending to allow flavors to meld. Taste and adjust seasoning before serving. For a vegan version, use vegan butter and coconut milk. Leftovers keep in the fridge for up to 5 days or freeze for up to 3 months.
