  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger

  • 1 cup (200g) granulated sugar
  • ½ cup (100g) packed brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs, at room temperature
  • 1 cup (245g) pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounces (226g) cream cheese, softened
  • ¼ cup (50g) granulated sugar (for cream cheese swirl)
  • 1 large egg yolk, at room temperature
  • ½ teaspoon vanilla extract (for cream cheese swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. In a small bowl, beat softened cream cheese with ¼ cup sugar, egg yolk, and ½ teaspoon vanilla until smooth. Set aside.
  3. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. In a large bowl, whisk together granulated sugar and brown sugar. Add vegetable oil and whisk until combined. Add eggs one at a time, whisking well after each. Mix in pumpkin puree and 1 teaspoon vanilla.
  5. Pour dry ingredients into wet ingredients and fold with a spatula until just combined. Do not overmix.
  6. Pour half the pumpkin batter into the prepared loaf pan. Dollop cream cheese mixture on top. Pour remaining batter over cream cheese and spread carefully.
  7. Use a toothpick or skewer to swirl in a figure-eight pattern, making 6-8 gentle passes.
  8. Bake for 55-65 minutes, until a toothpick inserted in the center comes out with moist crumbs. Tent with foil if browning too quickly after 40 minutes.
  9. Cool in pan on a wire rack for 15 minutes, then lift out using parchment handles and cool completely on rack.

Notes

Room temperature ingredients are key. Don’t overmix the batter. Let the bread cool completely before slicing to avoid crumbling. For a dairy-free version, use vegan cream cheese. For gluten-free, use a 1:1 gluten-free flour blend.
