These bite-sized BBQ skewers combine smoky, tangy flavors with easy prep, making them perfect party snacks for backyard gatherings and summer celebrations.

Ingredients

  • 1.5 lbs chicken breast or thighs, cut into bite-sized pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into chunks
  • Wooden or metal skewers (if wooden, soak in water for 30 minutes)
  • ½ cup ketchup
  • 3 tbsp apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • Optional garnishes: chopped fresh parsley or cilantro, extra BBQ sauce for dipping

Instructions

  1. Prepare the marinade by whisking together ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, pepper, and olive oil in a mixing bowl. Taste and adjust seasoning if needed.
  2. Add the bite-sized chicken pieces to the marinade, toss until fully coated, cover, and refrigerate for at least 30 minutes, ideally 1 hour.
  3. While the chicken marinates, cut the red bell pepper and red onion into chunks. Soak wooden skewers in water if using.
  4. Thread chicken pieces, red pepper, and onion alternately onto each skewer, leaving space between pieces for even cooking.
  5. Preheat the grill to medium-high heat (about 400°F or 205°C).
  6. Grill the skewers for about 4-5 minutes per side, turning carefully with tongs. Brush with leftover marinade or extra BBQ sauce after flipping. Cook until chicken reaches 165°F (74°C) and is nicely charred but juicy.
  7. Remove skewers from heat and let rest for 5 minutes. Sprinkle with chopped parsley or cilantro if desired. Serve warm with extra BBQ sauce for dipping.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Do not overcrowd skewers to avoid steaming instead of grilling. Marinate at least 30 minutes for best flavor; overnight marinating enhances flavor but watch for sugar burning. Use tongs to flip skewers to keep chicken intact. Brush extra sauce quickly to avoid flare-ups. Keep a spray bottle of water nearby for flare-ups. If chicken browns too fast, move skewers to cooler part of grill.
