  • 3 garlic cloves, minced
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 1 bay leaf
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and freshly ground black pepper, to taste
  • 6 ounces (170 grams) egg noodles (wide or medium)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest (optional)

Instructions

  1. In a large pot, add the chicken breasts and pour in the chicken broth. Toss in the bay leaf, dried thyme, diced onion, garlic, carrots, and celery. Bring everything to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F / 74°C).
  3. Remove the chicken breasts and set aside to cool slightly. Discard the bay leaf. When cool enough, shred the chicken into bite-sized pieces.
  4. Bring the broth back to a gentle boil, then add the egg noodles. Cook according to package instructions, usually 6-8 minutes, until tender but still slightly firm. Stir occasionally to prevent sticking.
  5. Add the shredded chicken back to the pot. Season with salt and freshly ground black pepper to taste. Stir in the fresh parsley and lemon zest.
  6. Let everything warm through together for 2-3 minutes. Taste and adjust seasoning if needed. Serve immediately.

Use fresh herbs if possible for best flavor. Do not overcook noodles to avoid mushiness. Shred chicken by hand for rustic texture. Skim foam from broth for clarity.
