  • 4 cups all-purpose flour (plus more for dusting)

  • 1 ยฝ teaspoons salt
  • 8 cups water (for the boiling bath)
  • ยฝ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 2 tablespoons unsalted butter (for beer cheese dip)
  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk (2% works too)
  • ยฝ cup beer (a lager or pilsner, not too hoppy)
  • 2 cups sharp cheddar cheese, shredded (from a block)
  • 1 teaspoon Dijon mustard
  • ยผ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper, to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm water, brown sugar, and active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add the melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined, then gradually add the remaining 2 cups of flour. Turn out onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic.
  3. First rise: Place the dough in a lightly greased bowl, cover, and let rise in a warm spot for about 45 minutes, until doubled in size.
  4. Preheat and prep: About 10 minutes before the dough is done rising, preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  5. Boil the water bath: In a large pot, bring 8 cups of water to a rolling boil. Carefully add ยฝ cup baking soda (it will fizz). Reduce heat to a gentle simmer.
  6. Shape the bites: Punch down the risen dough and pat into a ยฝ-inch thick rectangle. Cut into 1-inch squares (about 40-50 bites).
  7. Boil the bites: Working in batches of 8-10, drop dough squares into the simmering baking soda water. Boil for 30 seconds, flip, and boil another 30 seconds. Transfer to the prepared baking sheet, spacing 1 inch apart.
  8. Egg wash and salt: Brush each pretzel bite with the egg wash, then sprinkle generously with coarse salt.
  9. Bake: Bake for 12-15 minutes, until deep golden brown. Rotate the pan halfway through.
  10. Make the beer cheese dip: In a small saucepan, melt 2 tablespoons butter over medium heat. Whisk in 2 tablespoons flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously. Cook for 2-3 minutes until thickened. Reduce heat to low, add shredded cheddar, Dijon mustard, garlic powder, and cayenne (if using). Stir until melted and smooth. Season with salt and pepper. Keep warm.
  11. Serve: Let pretzel bites cool for 2-3 minutes, then serve warm with the beer cheese dip.

Notes

Don’t skip the boiling stepโ€”it gives pretzels their signature chewy crust. Use a light lager or pilsner for the beer cheese dip. Shred your own cheese for a smooth dip. For gluten-free, use a 1:1 gluten-free flour blend and gluten-free beer or broth. For dairy-free, use plant-based butter, milk, and cheese.
