These air fryer pumpkin seeds are a quick and easy snack that delivers an unbelievably crunchy texture and cozy fall flavor. Made with just four simple ingredients, they’re perfect for snacking, topping soups, or adding to salads.

  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon flaky sea salt (e.g., Maldon or Jacobsen)
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Separate the seeds from the pumpkin guts. Scoop the seeds and stringy pulp into a colander. Run cold water over them while using your fingers to separate the seeds from the pulp.
  2. Rinse and dry the seeds thoroughly. Pat them dry with a clean kitchen towel or paper towels. Let them air-dry for about 10 minutes.
  3. Preheat your air fryer to 350°F (175°C).
  4. In a medium mixing bowl, combine the dried seeds, 1 tablespoon of oil, 1 teaspoon of flaky sea salt, and any optional spices. Stir until every seed is coated.
  5. Spread the seasoned seeds in the air fryer basket in a single layer. Do not overcrowd.
  6. Cook for 8-10 minutes, shaking the basket halfway through. At the 8-minute mark, check for doneness. The seeds should be golden brown and smell toasty.
  7. Let the seeds cool completely on a plate or parchment paper for at least 10 minutes before eating.

Notes

Don’t skip the drying step—moisture prevents crunch. Flaky sea salt is more forgiving than fine table salt; start with 1 teaspoon and add more after cooking if needed. Shake the basket, don’t stir, to keep seasoning intact. For oven method, spread seeds on a baking sheet and roast at 350°F (175°C) for 15-20 minutes, stirring every 5 minutes.
