  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium tomatoes, diced (or 1 cup canned tomatoes)
  • 1 cup short-grain rice (rinsed and drained)
  • 3 cups chicken or vegetable broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp ground cinnamon
  • Salt and pepper to taste
  • 2 tbsp olive oil or sunflower oil
  • 2 tbsp fresh parsley or cilantro, chopped
  • Optional: squeeze of lemon juice

Instructions

  1. Rinse the rice until the water runs clear to remove excess starch (about 2-3 minutes). Chop the onion and garlic finely, and dice the tomatoes if using fresh. This prep usually takes about 10 minutes.
  2. Heat the olive oil in your pan over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent. Toss in the garlic and cook for another minute until fragrant.
  3. Add the ground meat, breaking it up with your spoon. Cook until browned and no longer pink, about 7 minutes, stirring occasionally to prevent clumping.
  4. Sprinkle in the cumin, paprika, cinnamon, salt, and pepper. Stir well to coat the meat and onions with the spices.
  5. Add the diced tomatoes (or canned), and cook down for 5 minutes, stirring occasionally until thick and aromatic.
  6. Stir in the rinsed rice, making sure it’s evenly distributed. Pour in the broth and bring everything to a gentle boil.
  7. Once boiling, reduce heat to low, cover with the lid, and let it simmer for 18-20 minutes without lifting the lid.
  8. After simmering, turn off the heat but keep the lid on for another 5 minutes to let the rice finish cooking and absorb flavors.
  9. Fluff the rice gently with a fork. Stir in the chopped parsley or cilantro, and if desired, a squeeze of fresh lemon juice just before serving.

Notes

If rice isn’t fully tender but liquid is gone, add a splash of hot water and simmer on very low heat covered. Don’t skip the resting time after cooking for best texture. Use a heavy-bottomed pan to avoid burning. Optional smoked paprika adds a smoky note.
