  • 2 ยฝ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp granulated sugar (optional)
  • 1 cup (226 g) unsalted butter, chilled and cut into cubes
  • 68 tbsp ice water
  • 67 medium apples (about 3 lbs / 1.4 kg), peeled, cored, and thinly sliced (Granny Smith and Honeycrisp recommended)
  • ยพ cup (150 g) granulated sugar
  • ยผ cup (50 g) packed light brown sugar
  • 2 tsp ground cinnamon
  • ยผ tsp ground nutmeg
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract (optional)
  • 2 tbsp unsalted butter, cut into small pieces
  • 1 large egg, beaten with 1 tbsp water (for egg wash)

Instructions

  1. In a large bowl, whisk together flour, salt, and sugar. Add chilled butter cubes and cut into flour using a pastry blender or fingertips until mixture resembles coarse crumbs with pea-sized bits.
  2. Sprinkle 6 tablespoons of ice water over mixture. Stir gently, adding more water one tablespoon at a time until dough just comes together when pressed. Do not overwork.
  3. Divide dough into two equal discs, wrap in plastic wrap, and chill for at least 1 hour.
  4. Toss sliced apples with lemon juice in a large bowl. Add granulated sugar, brown sugar, cinnamon, nutmeg, flour, and vanilla extract. Stir gently to coat evenly. Let sit for 15 minutes.
  5. Roll out one dough disc on a floured surface into a 12-inch circle about 1/8 inch thick. Transfer to a 9-inch pie dish, letting edges hang over.
  6. Pour apple filling into crust and dot with small pieces of butter.
  7. Roll out second dough disc similarly. Either place whole over filling and cut slits for steam vents or create a lattice crust by weaving strips over filling. Brush edges with egg wash and crimp to seal.
  8. Brush entire top crust with egg wash and sprinkle sugar if desired. Place pie on a baking sheet.
  9. Bake in preheated oven at 425ยฐF (220ยฐC) for 15 minutes. Reduce temperature to 350ยฐF (175ยฐC) and bake for an additional 40-50 minutes until crust is golden and filling bubbles.
  10. Cool pie on a wire rack for at least 2 hours before slicing to allow filling to set.
