  • ½ cup sweetened condensed milk
  • 1 large egg, at room temperature
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • A tiny pinch of salt
  • 1 cup yellow cake mix (about half a standard box)
  • 4 tablespoons unsalted butter, melted
  • ¼ cup chopped pecans or walnuts (optional)
  • 1 teaspoon cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a medium mixing bowl, whisk together the pumpkin puree, sweetened condensed milk, egg, pumpkin pie spice, vanilla extract, and salt until smooth and glossy.
  3. Pour the pumpkin filling into the prepared dish and spread it into an even layer with a spatula.
  4. In a small bowl, combine the yellow cake mix and chopped pecans (if using). Sprinkle this dry mixture evenly over the pumpkin filling. Do not stir.
  5. Drizzle the melted butter evenly over the cake mix layer. Sprinkle the cinnamon sugar on top.
  6. Bake for 30-35 minutes, until the top is deep golden brown and the filling is bubbly around the edges. If browning too fast, tent loosely with foil for the last 5 minutes.
  7. Cool on a wire rack for at least 10 minutes to allow the filling to set.
