These quick and easy mini turkey meatball subs are perfect for after-school snacks or busy weeknight dinners. Made with simple ingredients and ready in under 30 minutes, they’re a crowd-pleaser that kids and adults love.

  • 1 pound ground turkey (93% lean)
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons milk
  • 1 tablespoon olive oil
  • 8 slider buns
  • 1 cup marinara sauce
  • 4 slices provolone cheese, cut into quarters
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, beaten egg, minced garlic, oregano, salt, pepper, and milk. Use your hands to gently mix everything together until just combined, about 30 seconds.
  3. Roll the mixture into small balls, about 1 inch in diameter. You should get roughly 24 meatballs. Place them on the prepared baking sheet.
  4. Heat the olive oil in a large skillet over medium-high heat. Working in batches if needed, add the meatballs in a single layer and cook for 3-4 minutes per side, turning occasionally, until browned all over.
  5. Transfer the browned meatballs to the baking sheet and bake for 8-10 minutes, until cooked through and reaching an internal temperature of 165°F (74°C).
  6. While the meatballs are baking, warm the marinara sauce in a small saucepan over low heat.
  7. Slice the slider buns in half and place them on a separate baking sheet, cut side up. Toast them in the oven for the last 2-3 minutes of the meatballs’ cooking time, until lightly golden.
  8. Place 3 mini meatballs on the bottom half of each toasted bun. Spoon a little warm marinara sauce over the meatballs, then top with a quarter slice of provolone cheese. If desired, return to the oven for 1-2 minutes to melt the cheese.
  9. Place the top bun on each sub and serve immediately. Garnish with fresh basil if desired.

Notes

Don’t overmix the meatball mixture to keep them tender. Brown the meatballs for extra flavor. Toast the buns to prevent sogginess. For gluten-free, use gluten-free breadcrumbs and buns. Freeze meatballs separately for up to 3 months.
