  • 1 box chocolate cake mix (e.g., Duncan Hines Devil’s Food)
  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 cup water (or brewed coffee)
  • 1/2 cup chocolate frosting (e.g., Duncan Hines Creamy Chocolate)
  • 2 tablespoons cream cheese, softened
  • 12 ounces chocolate candy melts (e.g., Wilton or Ghirardelli)
  • 1 teaspoon coconut oil
  • 1/2 cup orange candy melts (or white melts with orange food coloring)
  • 48 candy corn pieces
  • 24 candy eyes
  • 24 orange candy-coated sunflower seeds (or small orange M&Ms)
  • Red decorating gel
  • 24 lollipop sticks (6-inch)
  • 1 block styrofoam (for drying)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 baking pan. Combine cake mix, eggs, oil, and water; mix on medium speed for 2 minutes. Pour into pan and bake 28-32 minutes until a toothpick comes out clean. Cool completely.
  2. Crumble cooled cake into fine crumbs in a large bowl. Mix chocolate frosting and softened cream cheese until smooth. Add frosting mixture to crumbs, 2 tablespoons at a time, mixing with hands until mixture holds together when squeezed (like damp sand).
  3. Using a cookie scoop, portion mixture into 24 balls (about 1.5 inches). Roll smooth. Place on parchment-lined baking sheet. Insert a lollipop stick halfway into each ball. Freeze for at least 30 minutes.
  4. About 15 minutes before freezing is done, melt chocolate candy melts with coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. Dip frozen cake balls into melted chocolate, tapping gently to remove excess. Place upright in styrofoam block.
  5. While chocolate is still wet, press 3 candy corn pieces into the back of each pop in a fan pattern (pointed ends outward). Use tweezers if needed.
  6. Once chocolate sets (about 15 minutes), attach candy eyes to front with a dab of melted chocolate. Place one orange sunflower seed or M&M below eyes for beak (pointed end down). Use red decorating gel to draw a small wattle under the beak.
  7. Let pops set in styrofoam block for at least 30 minutes. Serve at room temperature or refrigerate. Transport upright in styrofoam block.

Notes

For best results, freeze cake balls solid before dipping. Don’t skip the coconut oil in the coating—it gives a glossy finish. Work in small batches, taking only 4-5 cake balls out of the freezer at a time. If coating cracks, let first layer set, then dip again.
