  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 2 large eggs
  • 1 1/2 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 celery stalks, diced
  • 1 green bell pepper, diced (optional)
  • 4 cloves garlic, minced
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 cups low-sodium chicken or turkey broth
  • 2 large eggs, beaten
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 425ยฐF. Place a cast-iron skillet or 9-inch baking pan in the oven to heat.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, beat 2 eggs, then stir in buttermilk and melted butter.
  4. Pour wet ingredients into dry and stir until just combined (a few lumps are fine).
  5. Carefully remove hot skillet from oven, add 1 tablespoon butter to coat, then pour in batter.
  6. Bake for 20-25 minutes until golden brown and a toothpick comes out clean. Cool completely, then crumble into coarse crumbs. Set aside uncovered overnight or toast at 300ยฐF for 15 minutes.
  7. In a large skillet, melt 2 tablespoons butter over medium heat. Add onion, celery, and bell pepper (if using). Cook 8-10 minutes until soft. Add garlic and cook 1 minute more. Remove from heat.
  8. To crumbled cornbread, add dried sage, thyme, poultry seasoning, black pepper, and salt. Toss to combine.
  9. Add sautรฉed vegetables to seasoned crumbs and toss.
  10. In a separate bowl, whisk 2 beaten eggs with 3 cups broth. Pour over cornbread mixture and stir gently until moistened (like thick oatmeal). Add remaining broth if needed.
  11. Let mixture rest 10-15 minutes. Preheat oven to 375ยฐF.
  12. Transfer dressing to a greased 9×13-inch baking dish. Cover with foil and bake 30 minutes.
  13. Remove foil and bake 15-20 minutes more until top is golden brown and edges are set.
  14. Let rest 10 minutes before serving. Sprinkle with fresh parsley.

Notes

For best texture, dry the cornbread overnight or toast it. Start with less broth and add more as needed. Let the mixture rest before baking to ensure even hydration. Cover with foil for the first part of baking to prevent drying out.
