  • 8 ounces Brie or Camembert
  • 6 ounces Aged Cheddar or Gouda
  • 4 ounces Blue Cheese or Goat Cheese
  • 6 ounces Prosciutto, thinly sliced
  • 6 ounces Genoa Salami, sliced into thin rounds
  • 4 ounces Soppressata or Spicy Capicola (optional)
  • 8 fresh Figs, halved
  • 1 large Apple (Honeycrisp or Fuji), thinly sliced
  • 1 large Pear (Bartlett or Bosc), thinly sliced
  • 1/2 cup Dried Apricots or Dried Cherries
  • 1/2 cup Pomegranate Seeds
  • 1 cup Mixed Nuts (pecans, walnuts, almonds)
  • 1 tablespoon Maple Syrup
  • 1/2 teaspoon Cinnamon
  • 1/4 cup Honey
  • 1/4 cup Fig Jam or Red Pepper Jelly
  • 1 large Baguette, sliced and toasted
  • 1 cup Assorted Crackers
  • Fresh Rosemary or Thyme sprigs for garnish
  • Lemon juice (for apple slices)
  • Flaky sea salt (for figs)

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC). Line a small baking sheet with parchment paper.
  2. Roast the figs: Halve the fresh figs and place cut-side up on the prepared baking sheet. Drizzle with about 1 tablespoon of honey and a pinch of flaky sea salt. Roast for 10-12 minutes until soft and caramelized. Let cool on the sheet for at least 10 minutes.
  3. Toast the nuts: Toss the mixed nuts with 1 tablespoon maple syrup, 1/2 teaspoon cinnamon, and a pinch of salt. Spread on a separate baking sheet (or push figs aside). Toast for 5-7 minutes, stirring halfway, until fragrant and glossy. Let cool completely.
  4. Prep the fruits: Core and thinly slice the apple and pear. Toss apple slices with a squeeze of lemon juice to prevent browning. Place dried apricots and pomegranate seeds in small bowls.
  5. Slice the cheeses: Leave Brie whole or cut into wedges. Cut aged cheddar into thin slices or small cubes. Crumble blue cheese into a small bowl. Let cheeses sit at room temperature for about 20 minutes before serving.
  6. Prepare the meats: Fold prosciutto slices into loose ribbons. Roll salami slices into small cylinders or fold into quarters.
  7. Assemble the board: Place small bowls of jam, honey, and pomegranate seeds on the board as anchors. Position Brie prominently, then arrange cheddar and blue cheese nearby. Fan out prosciutto and salami in small clusters. Fill gaps with roasted figs, apple and pear slices, and dried apricots. Scatter toasted nuts and remaining pomegranate seeds over open spaces. Notes

For best results, let cheeses come to room temperature before serving. Roast figs just until soft and caramelized, not shriveled. Toast nuts in a single layer and stir halfway. The board should look abundant but not crowded. Leftovers can be stored separately: cheeses in wax paper in the fridge, roasted figs and nuts in airtight containers at room temperature for up to 2 days, sliced fruits within a day, meats wrapped in paper in the fridge for up to 3 days.
