  • 8 ounces pepperoni slices
  • 8 ounces salami, thinly sliced
  • 6 ounces smoked cocktail sausages or mini kielbasa
  • 8 ounces sharp cheddar cheese, cut into cubes
  • 6 ounces provolone cheese, sliced or cut into small wedges
  • 4 ounces spreadable cheese, like Boursin or garlic herb cheese
  • 8 ounces dark crackers or pretzel thins
  • 4 ounces white cheddar cheese slices
  • 2 tablespoons black olives, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby carrots
  • 1/2 cup dill pickle spears
  • 1/2 cup dried apricots or figs
  • 1/4 cup mixed nuts
  • 1/2 cup honey mustard
  • 1/2 cup ranch dressing

Instructions

  1. Warm the sausages in a skillet over medium heat for 3-4 minutes, turning occasionally. Set aside to cool slightly.
  2. While the sausages warm, cut the cheddar into 1/2-inch cubes. Slice the provolone into small wedges or triangles. Halve the cherry tomatoes. If salami slices are large, cut them into halves or quarters.
  3. Arrange the dark crackers or pretzel thins in the center of your board in an oval shape to form the football base.
  4. Cut the white cheddar slices into thin strips, about 1/2 inch wide and 2 inches long. Lay two strips parallel across the center of the football shape, about an inch apart. Add two more strips on either side to create the laces. Use sliced black olives to create the seams in a line down the center between the laces.
  5. Arrange the pepperoni and salami around the edges of the football shape, slightly overlapping. Place the warmed sausages in small clusters near the corners of the board.
  6. Scatter the cheddar cubes and provolone wedges around the board, filling in gaps. Place the spreadable cheese in a small bowl or ramekin and set it near one end of the board.
  7. Arrange the cherry tomatoes, baby carrots, pickle spears, and dried apricots in small piles around the board. Add the mixed nuts in another small pile.
  8. Pour the honey mustard and ranch dressing into small bowls. Place them on the board, ideally near the meats and cheeses. If the board is too full, set the bowls on the side.
  9. Step back and look at your board. Fill any empty spots with extra crackers, nuts, or a few more cherry tomatoes. The goal is to have no bare wood showing.

Don’t overthink the shape; imperfection makes it look homemade. Warm the sausages just before serving for best flavor. Layer heavier ingredients near the edges. Use two types of crackers for visual depth. Prep everything before arranging. Keep covered until game time; take out 15 minutes before serving.
