Instructions

  1. Preheat your oven to 350°F (175°C). Place your 9×13-inch baking dish in the oven while it preheats.
  2. Make the cobbler batter: In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Pour in the milk, melted butter, and vanilla extract. Stir until just combined—a few lumps are fine.
  3. Pour the batter into the hot dish: Carefully remove the hot baking dish from the oven. Pour the batter into the dish and spread it evenly with a spatula.
  4. Sprinkle the pecans over the batter: Evenly distribute the chopped pecans over the batter.
  5. Make the topping syrup: In a small bowl, combine the brown sugar and boiling water. Stir until the sugar is completely dissolved. Add the melted butter and vanilla extract, and stir again.
  6. Pour the syrup over the top: Slowly and carefully pour the syrup mixture over the batter and pecans. Do not stir.
  7. Bake for 35-40 minutes until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly. A toothpick inserted into the cobbler (not the syrup layer) should come out clean.
