  • 1 cup (200g) granulated sugar
  • ยฝ cup (50g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ยฝ teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup (240ml) whole milk
  • ยฝ cup (120ml) vegetable oil
  • 2 teaspoons vanilla extract
  • ยฝ cup (120ml) hot coffee
  • 1 cup (226g) unsalted butter, softened
  • 3 cups (360g) powdered sugar, sifted
  • ยฝ cup (50g) unsweetened cocoa powder (for buttercream)
  • 3–4 tablespoons (45-60ml) heavy cream
  • 1 teaspoon vanilla extract (for buttercream)
  • a pinch of salt
  • 30 pieces candy corn
  • 12 chocolate wafer cookies (e.g., Oreo Thins or Keebler Fudge Stripes)
  • 24 small round candy eyes
  • 12 orange jelly beans
  • red candy melts or red gel icing
  • a handful of chocolate chips (melted, for attaching decorations)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk eggs, milk, oil, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Add hot coffee and stir gently until batter is thin and smooth.
  5. Divide batter evenly among liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Cool cupcakes in pan for 5 minutes, then transfer to a wire rack to cool completely.
  7. For buttercream: Beat softened butter with an electric mixer on medium speed until creamy and pale, about 2 minutes. Add sifted powdered sugar and cocoa powder alternately with heavy cream, starting on low speed. Increase to medium-high and beat for 3 minutes until light and fluffy. Add vanilla and salt, beat for another minute.
  8. For chocolate feathers: Spread a thin layer of chocolate buttercream on one side of each chocolate wafer cookie. Press 2-3 pieces of candy corn into the buttercream in a fan pattern. Place on a parchment-lined baking sheet and refrigerate for 10 minutes.
  9. Once cupcakes are cool, pipe a generous swirl of chocolate buttercream onto each cupcake.
  10. Press a chilled chocolate feather cookie into the back of each cupcake at a slight angle.
  11. For turkey face: Place two candy eyes near the top center of the cupcake, securing with a tiny dab of melted chocolate. Cut an orange jelly bean in half diagonally and press the pointed end into the frosting below the eyes for the beak. Add a small dot of red gel icing or a piece of red candy melt below the beak for the wattle.
  12. Repeat with remaining cupcakes. Serve at room temperature.

Don’t skip the coffeeโ€”it enhances the chocolate flavor without making it taste like coffee. Use room temperature ingredients for best results. Chill the chocolate feathers before assembly to prevent them from sliding off. Pipe the frosting rather than spreading for better texture to hold the feathers. Use fresh candy corn (bendable, not brittle).
