  • 3 cloves garlic, minced

  • 1 bay leaf

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Shred the chicken: While the chicken is still warm, remove the skin and bones. Shred the meat into bite-sized pieces using two forks. Set aside.
  2. Prep the vegetables: Dice the onion, slice the carrots into rounds, slice the celery, and mince the garlic.
  3. Melt the butter: Place a large Dutch oven or stockpot over medium heat and add the butter. Let it melt completely.
  4. Sauté the vegetables: Add the diced onion, sliced carrots, and sliced celery. Cook for 6 to 8 minutes, stirring occasionally, until the onions are translucent and the carrots have started to soften. Add the minced garlic and cook for one more minute until fragrant.
  5. Add the broth and water: Pour in the chicken broth and water, then add the dried thyme, dried rosemary, and bay leaf. Stir, scraping up any browned bits from the bottom of the pot.
  6. Bring to a boil: Turn the heat up to high and bring the soup to a rolling boil (about 5 to 7 minutes).
  7. Add the noodles: Once boiling, add the egg noodles and stir. Reduce heat to medium and let simmer for 8 to 10 minutes, or until the noodles are tender.
  8. Add the chicken: Stir in the shredded rotisserie chicken and let it heat through for about 2 minutes.
  9. Season to taste: Remove the bay leaf and discard. Add salt and pepper as needed.
